Untada generosamente e enfarinhada. Reserve e dexe esfriar até ficar morno e mole. Na tigela grande onde a massa final vai ajuntando por partes, misture (não bater) os ovos, o açúcar, a baunilha e o café instantâneo. Junte aí o conteúdo da outra tigela de chocolate e manteiga derretidos. Já em temperatura adequada (morno). Na tigela menor misture 1 xícara da farinha de trigo, o sal e o fermento em pó. Junte esta mistura na massa anteriror. Por último misture as 200 gramas de chocolate qubrado ou gotas e as nozes com a farinha restante 1/4 de xícara e acrescente à massa também. Misture tudo muito bem. Coloque a massa na forma untada e asse por 20 minutos (forno médio) abra o forno, bata a forma até que a massa libere as bolhinhas do crescimento e asse mais 15 minutos ou até que um palito introduzido no bolo saia limpo. Não deixe secar muito. Retire do forno em papel alumínio e dexe uma noite na geladeira. No dia seguinte desenforme para corta porque fica firme e a faca não entra fácil. Corte do tamanho desejado. Refogue 2 xícaras de chá de arroz, junte 1 xícara de chá de passas e uma de presunto picado.<br />Cozinhe em fogo baixo por cerca de 20 minutos em uma panela parcialmente tampada. Depois de cozido misture uma colher de sopa de manteiga, 2 de salsa e 3 de queijo ralado. Apague o fogo e deixe descansar por 10 min.
